Healthy PB Cups!

Healthier Snack options

I don't know if your are like me, but I LOVE SNACKING! My husband thinks it's crazy, and he is not much of a snacker, but I'm pretty sure my meals are 2/3 snacks. Literally, as I am writing this blog, I am eating a...wait for it...chip sandwich! You know, where you crush chips inside your sandwich? Anyone? Ok..just me then.

But, with all the snacking comes bad snacking decisions, and weight gain! My first child was 10 pounds when he was born, and although unhealthy snacking and cokes may have not have been the only contributor to him being so big, im confident it was some of the reason.

Changing the way you snack, not only makes you feel better, but will help you to not pack on extra pounds.

Swapping bad, for good -

Potato chips -> Cucumbers with a dash of vinegar and a teaspoon of extra virgin olive oil.

Chips and dip ->Tortilla chips with guacamole, or fresh salsa.

Nachos ->Apple Nachos! Slice up an apple, and melt some of your favorite nut butter, and just a tablespoon of dark chocolate chips and drizzle over apple slices...amazing!!

Ice Cream ->A cup of Greek yogurt, with granola, or fruit sprinkled on top. Also, Plain oatmeal, with a small scoop of peanut butter and just a sprinkle of dark chocolate chips!

One of my favorites: Healthy Reese's PB cups!

This recipe makes quite a few too!

1/2 cup of coconut oil

1/2 cup of high quality cocoa powder

1/2 cup of smooth almond butter

1/4 raw honey or maple syrup

1/2 teaspoon of vanilla

Melt coconut oil. Been all ingredients in a blender until smooth. Pour into paper lined muffin tin cups or a silicone muffin tray (also seen ice cube trays work!) and fill half full. I toss them in the freezer and they are ready in 10 min! When hardened remove from tin and put in a freezer bag. You will need to keep them in the fridge or freezer because of the coconut oil.

These are such a delicious treat to snack on when you really need something sweet, but healthy!
